曹崇江,伟德官网下载客户端伟德官网下载客户端食品質量與安全教研室主任,國家中藥材加工研發專業中心主任,教授,博士生導師。美國UICArgonne國家實驗室博士後,中國食品科學技術學會青年委員。主持十三五國家重點研發計劃課題、國家自然基金面上項目、江蘇省科技廳自然基金面上項目、江蘇省重點研發計劃項目、江蘇省農業自主創新資金項目等10餘項,在國際雜志Applied Catalysis BFood ChemistryFood HydrocolloidsJournal of Agricultural and Food Chemistry發表論文60餘篇,獲中國商業聯合會服務業科技創新獎一等獎(2016),江蘇省科技進步二等獎(2019)。執行主編參編專著一部,副主編參編教材多部。


課題組主要研究方向:
(1)新型智能食品包裝材料研制及在果蔬保鮮品質精準調控研究
(2)藥食同源營養功能組分發掘及功效評價:基于膳食、腸道菌群與免疫的分子機制研究
